PRODUCTION OF WINE BY FERMENTATION OF WHITE AND BLACK GRAPES USING WILD TYPE YEAST

Wine is an alcoholic drink that is made by fermentation of grapes with the use of yeasts which breaks the sugar into Co2, ethanol, and heat. Different quality of a wine is produced due to the variety of grapes and also due to the different strains of yeasts used in the process of fermentation. Wine has a lot of health benefits like it increases immune response, bone density, it reduces cholesterol and also reduces the risk of type 2 diabetes, stroke, cardiovascular diseases. Wine also contains antioxidants that release stress and decrease cellular aging. In this project, red wine and white wine were isolated from black and green grapes respectively by the use of wild-type yeast. These yeasts were isolated from bread and then they were inoculated with the grape extracts which were then kept for fermentation for 20 days. Then the extract was filtered and pasteurized after which they were checked for microorganism contamination. In that short span of fermentation, the wine was almost ready but further fermentation was required to develop a much finer blend and taste.
